I have found that I have much better luck growing carrots, beets and radishes as fall crops. The carrots will be much sweeter in the fall and the beets and radishes grow fast in the heat while maturing in the cooler fall. The radishes won't be as hot either.

EDIT: The carrots can be left in the ground most the winter if mulched. I pulled the last of my carrots in mid February to make room for planting this years onion plants.

Slowly trying to get mine in. Finally got it tilled, and if I can get any time in between working late, kid activities, and rain storms, I'll get it planted. The asparagus bed has already provided some good stuff, and the strawberry bed is loaded with young berries and blooms.

I have 2 raised beds, 6x12 each producing snow peas and spinach (both planted in early november and make good winter crops). Tomato plants started 2 weeks ago and will add more this weekend as well as peppers. I stick with romas and cherry/bell shaped varieties on the tomatoes as they seem to produce better for the heat we get (just keep them watered good). They may slow or stop producing in the worst of the heat but will produce again into the fall. If I can get over this stinkin cold/allergies I'll put in another raised bed maybe this weekend.

I finally got all my planting in last week. I found that mulching heavily with prairie hay once the plants get up a little really helps control the weeds and helps in the hot months. But don't use straw! You'll have weeds in a week growing from the straw.
