i make up a dry rub. this was the first time i have put it on my brisket. man it was good. also the first time i did burnt ends. also great. i put my ribs in a aluminum pan with a little water in the bottom. also cover the pan mostly, but leave the side closest to the firebox open. that way the smoke gets trapped in the foil tent. after a few hours they are done. was the best i have ever made.
