Thanksgiving dinner - oddball dishes?

I'm doing some research, trying to find some things to try out. Wondered if you guys had any "non traditional" dishes you have tried that came out well?

I'm thinking of doing a broccoli, rice and cheese casserole with bacon and gouda cheese instead of cheddar. I've found a couple of places online where they've used the gouda and said it was good - it just occurred to me out of the blue Tuesday morning that this might be a good combo.

Also, thinking of trying out some roasted brussels sprouts with onion, bacon and a balsamic glaze to drizzle on them.

Lastly, I am trying to think of different things to do to the bird... I am leaning toward a Cajun-inspired turkey, injected with Cajun-infused butter, and maybe even making a Cajun stuffing with sliced kielbasa sausage and shrimp. My biggest concern with this one would be the shrimp - shellfish don't do well if they get overcooked, and I'm thinking inside the bird, they likely would.

Thoughts? Ideas? Recipes? I'm always open to new ideas when it comes to food (except testicles and the like), so I put this in the "Stupid Stuff" section so the people who complain about non-firearms-related posts can rant about it all they like. :D

Was listen to radio program yesterday on the way to hunt and they were crushing hot/spicy cheeto's and covering the bird prior to baking. Suggested cool ranch Doritos, Funonions, etc as well.

Other than deep frying or smoking, covering with lemon pepper and garlic is about as risqué as we've gotten with a baked bird. Not sure about the shrimp.....may confuse the palate lol. There' always the lemon breast prep too.

It will only be the wife and I, but we're foregoing tradition altogether this year.

My sister brought us a fully-cooked home-made Mexican Casserole a few weeks ago, and it's thawing in the fridge for tomorrow... :D
