Whew....what a week!!! It felt like 2 weeks rolled into 1 week!!!!:censored:

Anyways.....this little meal for lunch today just made the weekend have a better start.

Is there anything better than refried beans mixed into your rice ....1 Barbacoa taco..1 Buche taco. No cerveza....it was a working lunch.

Now for a little(yeah right) Jack Master Distiller #5 and some music while I relax from this crazy week!!!

One of my prescription meds precludes my using alcohol, but that's OK. The meal sure sounds good. Something I like to do is prepare white rice according to the package directions, and then mix green chili enchilada sauce in it. Put some chicken next to it in a baking dish, maybe add re fried beans and top the mixture with grated cheese. Pop it in either the microwave or convection oven until the cheese is melted and pour Mrs Renfrow's green salsa over it. Damn, that's good.

A nice cold bottle of pop (or beer, if you insist) goes real well with it.

If I never ate rice again in my lifetime, I'd never miss it.
Just never acquired a taste for it. I look at it as a filler to help fill the belly with something other than good food, kind of like bread. (ok beat me now)
I know, I'm odd. I'll eat it, but if it's on the menu, I'll ask for rice to not be on my plate as it will just be wasted food, and I don't like to waste food.

Brown rice (not overcooked) is really good with a meat (and cheese!) of about any type. If the rice is mushy/sticky, it's overcooked.

Sweetie used to make a chicken and rice dish (w/cheddar) that was absolutely amazing. :drunk2:

I've known Americans that were POW's in Japan during WWII and they can't look a grain of rice in the face even today. If I remember correctly, there is very little vitamins in rice and it created many life-long health problems since that was about all they had to eat during their imprisonment.
