got a beer butt bird goin on the treager that I started about 9:00am. I injected it with jalapeno butter. I'll give it about 6 hours and see where its at. The treager is running a tad cool with the cooler weather.

I am making smoked meatloaf. 50/50 70% hamburger and mild sausage with butter, bread, milk, salt, diced bell peppers and Vidalia onion. smoked for 3 hours at 250 degrees with oak, covered with bacon. the last hour, I just bushed BBQ sauce on it.

Looks awesome! We ate at a restaurant in Wichita awhile back and I ordered the bacon wrapped, smoked meatloaf.
It came out sliced, and then put BBQ sauce on the sliced sides then put it on a flat grill to caramelize the sauce. Dang it was good!

Ha Ha, I tried Jeff's smoked meatloaf for the first time night before last. I did not bacon wrap like a fatty. The open HB and sausage absorbed a lot of smoke. Little too strong for me for plain by its self, but on a sandwich with heavy mayo and sliced tomato and lettuce.

Last night I tried a new recipe. I like cabbage rolls, used to live close to Eddie's Steak House in Tulsa, would eat there at times but many people did not know you could phone order carry out cabbage rolls and pick them up at the back door. I moved out to the lake area several years ago, so have not had them in years, and now they are closed.

I had a friend email me a kinda stupid simple recipe for easily making them in a pot, brown some ground beef, throw in some stuff most people have in their kitchen, add bag of chopped coal slaw, and a few other items and simmer about 30 min. Biggest deal is chopping up an onion and opening a few cans. Not neatly wrapped like restaurants serve, but put a spoon full out of a bowl in your mouth and it tastes the same. I was surprised there was not any special hard to find seasonings or something like that.

My wife came on the recipe for cabbage rolls that Freddies in Tulsa makes. Danged tasty.

Here you go for the easy Unstuffed Cabbage rolls, and I made it easier by varying a little from the original recipe with my comments after the hyphen - mark, i will make it the very same way next time. I do not think I could stand it any better. JMO

INGREDIENTS
2 lbs 90% lean ground beef browned in pot - I did not drain, used the juice.
1 large onion, diced - I put in early enough to saute a little as the meat was about done.
1 garlic clove, minced - I used 1 Heap Tbl spoon Jar Minced Garlic
1 small cabbage, chopped - I used Lg Bag of Chopped Cole Slaw
2 1/2 cups white Minute Rice - Just pour it in dry.
2 (14 1/2 ounce) cans diced tomatoes - I used 1 28oz Hunts can I had on hand
1 (8 ounce) cans tomato sauce - I had none, used 1 can Rotel Tomato & diced pepper, worked well
1/2 cup water - Added more as needed as the rice absorbed and it cooked down.
1 teaspoon ground black pepper - I added a more to fit my taste buds
1 teaspoon sea salt - Added a little more to fit my taste buds (However I do not eat much salt)
Optional very small pinch of cinnamon - I think Eddie's had that, it worked for me.

DIRECTIONS
In a large pan, skillet, or dutch oven, brown the ground beef.
Add the garlic and onion, cook an additional minute or two if desired.
Add all remaining ingredients and give it a stir.
Bring to a boil, cover, reduce the heat and simmer about 25 minutes or until the cabbage is tender. - I stirred a couple times and had to add a little water.

Pretty easy, pretty tasty. Hope you enjoy.
