We occasionally use the cast iron method, but I like to use it after cooking some bacon and sausage. All those great flavors are in the oil left in the pan and transfer to the ribeye.
Wife likes the fillet, well done, so I'll sear hers and stick it in the oven to finish. My steak needs to be cooked to the level that I need to chase it around the plate to kill it, and it better bleed.....

I never got the "knack" for seasoning cast iron and having it actually work good until I found his videos. I do it like he does and wallah! It works!

He is good but ignore the video about cleaning cast iron in a self cleaning oven. Even he now says it is to dangerous as there have been some fires and ruined cast iron. If you are on FB look for the Cast Iron Cooking group. He is a member along with over 250,000 others. No politics, cat videos, funny memes, knocking other's food, etc. Just cast iron care and cooking. Very strict rules but with that many members they have to be. Lots of good recipes get shared too. I am a member and told my dentist's assistant but it but she says she has to leave the group. Claims she is gaining weight just seeing all the photos of stuff people cook.

Some of the things they make in CI I never would have thought of, sure tonight has the normal steaks, trout, fried chicken, etc, but Enchilada casserole over campfire in a dutch oven.

I'll order a ribeye if I'm eating out, but nothing compares to a fatty chuck eye over coals. I'll throw some mesquite chips on the propane grill to get that familiar flavor in a pinch.

If you want solid cast iron cooking, youtube Kent Rollins. That dude could resurrect the dead with his cooking. Local Okie too.

You buy or build that table? Looks good.
I'd make that lower front piece into a drawer face. You'd have a place to store your grates and such.

I bought it, guy was moving and had never used it, got a $700 table for $250! Something I would never have paid full price for. Was looking at building one, but fell into a deal.
