My brother has started selling quarters, halves and wholes . . . I think he has 2 wholes sold and a 1/4 so far. Planning to butcher in October sometime I think.

Do not use Big Country in Enid. For every positive experience there's 20 negative ones. Every elk I know of that's been taken there came back rancid.
What in the heck are they doing? No refrigeration?
Tonkawa meats actually lets your deer or elk hang just like beef on the rail to help with tenderness and flavor at the perfect temperature.

Tonkawa Meat, 580-628-4550 is who I use. About an hour and a quarter from OKC to the North near I-35. Tell Rusty I sent ya if you go that way. They vacuum seal everything vs white butcher paper.

Thanks Dennis. Do they only process/butcher or do they also supply the half/quarter? Looking for a one-stop-shot short of deal.

Not sure, the last one I know of was a cow shot in January at the Wichita Mts, and it was cold out when shot. Delivered to the butcher the next day on ice and it was not good at all when they got it back.

Sad to waste a once in a lifetime elk.
I've been with some folks that took their deer to other processors in my area. I advised against them getting it done there as there were 20 or so piled in an open horse trailer outside of the shop and the weather was in the 60's. One man operation so there is no way in heck he was going to get to them all without some spoilage of those on the bottom of the pile. First one in got screwed, last one in was on top of the pile.
That's why a lot of venison gets a bad rap.

Lots of sketchy things go on in the meat processing world. There are some great shops but also some terrible ones. We used one in Coke, TX that was downright weird. We had a nice, beautiful steer that was dropped off. Pinned up, grain feed, given a couple beers occasionally. I mean pampered and well fed. We spent hundreds of dollars feeding of the animal. We did not drop off, but when we picked up the couple workers were acting weird. When we were paying I asked to look around, and went walking through a couple areas. One of the workers followed me around with a knife in hand. I lifted my shirt and put my hand on my now not concealed gun grip. He was staring at me intently. It was super odd. These guys were just Deliverance Different.
Anyways, we got our ‘beef’ out and loaded without any help. A couple days later we started eating on what I can only describe as ‘not beef’. I think it might Bob, the new guy, who didn’t work out. We tried one of every cut, and it was all terrible!!! Steaks didn’t look like anything I’ve ever seen. We threw it all out after trying some pieces. Definitely not beef!

GlockPride that is just terrible.

I have never took an animal to the butcher.
If I kill it I am cleaning and eating it.
I have done many cows and steer and deer.
If you have time to hunt it you should have time to process it.. or you should make time.

I have a #22 big bite Lem meat grinder that I make ground burger with and again this year I will help anyone that wants to make a bunch of ground meat.

Wow, undocumented workers I'm assuming? Not sure how 71 people from the same area could go missing and unnoticed for that long. Bizarro!!!!!
