I see a lot of plain cornbread in these pics. Yall really should try mexican cornbread. dice hot peppers of your choice. 1/2 cup or more of shredded colby jack or other favorite cheese, a can of corn drained. add that to your regulare coornbread mix and dont use the sugar.
Also if you have a cast iron skillet, use it. Preheat skillet to 450 with a tablespoon of oil in it and pour the batter in it when its sizzlin hot. Bake 40+ min..

Sweetie used to add cooked sausage or ground beef to that and we'd make a meal of it alone. For years, I thought Mexican cornbread was supposed to have meat in it. :D

I was thinking 1 lb to make it really meaty. Maybe some ground deer meat. mmmm
Should be delicious, but still no clue on the amount. Just allow for shrinkage when it's fried, which will vary depending on fat content. Really lean ground meat probably won't shrink much. But you probably know all that. :D
