I think its time to bring charcoal back into my life.

Do it.
Had a Weber gas for years and love it, but it gets rarely used now.
Family got me a Weber smoker for Christmas and the charcoal big bit me.
Found bags of charcoal on clearance in the spring and stacked a few hundred lbs in the garage. I’m lighting fires at least 3 or 4 times a week. Sometimes more.

Do yourself a favor and get a chimney starter and some fire cubes. Worth it.

@jmike314 are you using the starter chimney even when using the vortex and side baskets? I almost bought a webber deluxe charcoal grill last year at Home Depot on clearance and talked myself out of it. I grew up with a dad that thought propane was a sin. I am going to have to find me a deal on a kettle I guess.

I like the chimney because I can get a lot of charcoal hot pretty fast - but I don’t always use it. I’ve got a propane starter on a couple of grills that’ll light the baskets - the Weber Performers are really nice. Last night I just shoved a couple of fire starters in the vortex and piles charcoal around them. All kinda depends on what mood I’m in and what I’m cooking.

Tonight I dumped the chimney into the baskets for some mushrooms, onions, and top sirloin.

Check out CraigsList, LetGo, OfferUp for Webers. I like bringing back to life old grills. Have picked up more than one 300$-400$ grill for 50$ or less - cleaned them up - put them to work.

Anyone use a Can Cooker? I just ordered one to take to the mountains to use in deer camp. I currently use dutch ovens but sometimes they don't hold enough to feed a large group.

Yes, I understand it will be different types of meals from the can cooker than from a DO and it won't do biscuits. DO will NOT be replaced by this thing ;) .

Put that chimney starter on top of your heat pump or AC unit while its running. Takes about 5 minutes or less to get perfect coals with the air being shoved through it.
Looks like a rocket ship trying to dive into your outside unit. Used to have a pic showing that but haven't moved it out of photobucket.

Had a small chuck roast that needed cooking. Instead of the crock pot, I decided it was time to try one smoked. I set the kettle up for smoking and a few hours later had me something tasty.

You can cook those longer and make pulled beef for sammiches just like with pulled pork. Works great, and pulled beef with some sauteed or grilled peppers and onions and provolone cheese makes for some AWESOME sammies!

Shoulder on right now. I used to wrap em at 165 or so but last time I didn’t wrap at all and it was pretty darn good. A few more crispy bits that evened out the rest of the tender meat nicely during the pull. what do you smokers do w your shoulders?

I’ve never wrapped a shoulder or butt. There’s plenty of fat to keep it from drying out. It will speed up the stall and cook faster though. I start poking for tenderness and jiggling the bone at 195 internal. Usually go to about 205 or so.

Yep. Took it off at around 190F....wanted to do sliced. Next time I’ll get a bigger one and so pulled. It was better than I expected. Had it tonight with potatoes and sautéed onions & mushrooms.

Smoked pot roast.....who’d a thunk it.

I had pulled/shredded roast beef at a sports bar this evening. Huge spud hollowed out with about a 1/3 pound of beef, topped with caramelized onion, shrooms, jalepeno and a mountain of melted cheese. A jus on the side to dip in. Man that was good.
