Mitchell's Jewelry in Norman. It is well worth the drive in my opinion. When I got engaged we looked at several stores in Norman, OKC, and Moore, and they impressed us the most. If you go there ask for Andrew, and tell him I (Matt) sent you.
Rings, etc. (Edmond) seems a bit unassuming in name and in the way the shop looks from the outside, but their selection is pretty impressive.

You might still look at BC Clark jewelers. While they have more than one store, they aren't one of the big chains. In addition, if it rains on your wedding day, you get your rings free.
