We always have more than enough deer to eat I thought I''d try to smoke and entire hind quarter in the smoker this season.

I have done it a couple of times. Along with the deer hindquarter, I smoke two pork butts. I place the pork butts on the rack above the deer and let the fat from the pork "baste" the venision. GOOD STUFF!

I was in Chicago once and this restaurant had "smoked butt" on the buffet. I didn't eat it.
