[QUOTE="clock152, post: 2617640, member: 27551"] The Son brought us about 10 Lbs of Jalapenos this morning.... canned some up and made a few Atomic buffalo truds... but the real goodness is the 10 jars of Candied Jalapenos.... man we love this stuff. The makes about 5 half pint jars. 1 and 1/2 Lbs of Jalapenos-- sliced 1 cup of white vinegar 3 cups of granulated sugar 1/4 tsp of Turmeric 1/4 tsp of Celery seed 1 and 1/2 tsp of garlic powder 1/2 tsp of Cayenne pepper Bring all ingredients, but the Jalapenos to boil in a non-reactive pot. reduce heat and simmer for 5 min. Add in your sliced jalapenos and bring to boil again. reduce heat and simmer for 4 min. using a slotted spoon fill the 5 half pint jars with the Jalapenos to about 1/2 inch from the top. Ladle in the hot syrup to fill the jars to within 1/2 inch of the top. use a non-metal stick to poke down into the jars to make sure there are no air bubbles waiting for you. run a damp cloth around the lip of the jar and put your warmed lids and rings on the jars. Water bath can the jars for 10 min ( 15 for pints ) and then set them out to cool for about 12 hours. store in a cool dark place as with any canned food item. This stuff is great on cream cheese.
