Pressure can potatoes . The okra I do is slightly cooked in a brine the put in pint jars with the brine. No canning just tighten lids and let cool.Do you just hot bath in water or mix a brine?
@THAT Gurl posted a video of a woman frying canned french fries a few weeks (months?) back in the prepping forum. As I recall, the lady in the video said they were a little bit fragile, but tasted fine.Hmm. Wouldn't have thought you could fry canned potatoes. Good?

I grow potatoes and am looking for a way to have some good potatoes in mid summer wile the fresh batch is growing, and the old batch is either gone (ate up) or got too nasty (rotten).
This year I tried boiling some peeled and cut up ones, cooling them off in the colander where they can drain too.
Then package them 2# to a bag and freeze them!
They are edible, but meh!
