Canning potatoes for frying.

Potatoes like it cold for longitivity but dont like to freeze.

I once dug a row of potatoes. Left them lay in the field overnight not knowing we was going to have a good frost.

Well they froze enough on the top that they died and black juice oozed from the eyes!

You can slice thin and dehydrate and put in quart jars and use them for stews, roasts.

I can okra for frying also and it is delicious

The best fried okra I have ever had was pickled, then fried whole in a traditional okra batter with a little salt on top. Absolutely amazing.

I deep fry raw okra whole as well. Use a thin batter like they use on fish. Comes out real crispy.
