Scored some steaks at wally world this morning, ya I know but thier steaks at this store are actually pretty good. Anyway go 4 ny strip and 1 ribeye, strip steaks went into vac bags and in the freezer, ribeye for got hit with kosher salt, and a bge at 600 degrees for 4 minutes per side, internal temp was 128. Perfect..

Ok, here goes. A little pic heavy for now. Prolly some more pics later. Been cooking for about 3-4 hours.

First, a double-smoked ham glazed with Chris Lilly's apricot, honey & dijon glaze. I think I left out the cayenne, dangit, and I don't have any Worcestershire sauce, so I substituted a little ketchap manis.

Next is SMOKED scalloped potatoes in cast iron.

First you start with sweating some onions in bacon grease, then add some garlic:

Then flour to make a kind of roux, then add heavy cream:

Rinse the cast iron and lay down some sauce:

Layers of potatoes, cheese, more sauce (it's like a Béchamel sauce) and of course BACON:

And finally throw it on the smoker around 375-400ºF for about an hour:

Currently roasting some butternut squash in the oven, also made some devilled eggs and about to pop some garlic bread in the oven, too - also homemade. Everything from scratch today, except I didn't cure the ham.

I'm trying a little experiment with chili this evening......using Chorizo for the meat instead of beef or turkey. Sure smells good!!
Turned out superb!! I'll be using chorizo exclusively now in my chili.


:spaghetti:
I've thought of trying that before but I always backed out. I have made chili out if breakfast sausage many times and it turns out great.

Did you change your recipe any or just use chorizo instead of other meat?
