Nothin' fancy... hickory smoked Spam with extra sharp cheddar melted on top. Pretty tasty.

Had some on white bread, and some on crackers (ha! in case I wasn't getting enough salt).

About the only way I like Spam is cooked on a stick over an Aspen wood fire......and washed down with a cold beer!

Started this last night with a rub. Woke up at 0400 and set it on the counter. Fired the smoker up at 0500

Smoked till 203 then rested an hour in a cooler. 1st brisket in years and I think I did well.

I love spam sliced thin and fried crisp with mayo on cheap white bread. If I have tomato I'll add some.
