Christened The Weber Kettle tonight. Wife had picked up some NY strips and chicken. So first cook was strips and grilled some potatoes. Think I could have used some more coals. Didn't get above 400-450 with it . Didn't get great grill marks. I tossed some pecan pieces in and got a lil flame to sear them. They tasted great and all the family had no issue. Looking forward to getting to know this thing.

Are you using the charcoal baskets?
What kind of charcoal?
Temp at the grill and lid will be different.

That's wonderful where did you get the fresh unmutilated ham I may have to give that a try especially with the jallipino glaze. May hit you up for more info on curing etc

I don't have baskets yet. Looked around town couldn't find any. Going to order some and a vortex. I picked up 75# of Royal oak classic today so it should keep me going for a while. I have watched a bunch of YouTube but will check out those sites. Thanks.

Unfortunately, grill marks with the small diameter wire on kettle grills are just about impossible. You might get some light impressions but the meat pulls the heat away too quickly.
What you do get is a great charcoal flavor, and your tip of throwing some chips on to sear is a great idea.

Doing the first smoke on my cabela’s pellet grill the mrs got me for Christmas. Been holding steady at 225 all day when the lid is closed. Another 10 degrees and it’s coming off to rest in an ice chest.

Been trying to use the kettle as much as possible. Made some chicken last weekend. Last night some burgers and today started to use it for smoking. Got some poor man's food going in case screwed it up. Some BBQ bologna and smoke sausage. It's about ready to eat. Wife has some homemade potato salad in the fridge should be good eating.
