Summer casserole. Yellow squash and zucchini from our garden, roma tomatoes, onion, sweet potato and a white since I ran out of sweet, turkey smoked sausage, seasoning and cheese. Yummy. I need to make this more often as it is reasonably healthy.

I've made that and it's really easy and good.
Not as healthy but if you're out of turkey sausage, chopped up slivers of ham work great too.

She doesn't care for it but mama fixed me one of favorite things for supper tonight.......liver and onions.

I ate till I felt like I was going to pop and there's still enough left for a sandwich tomorrow for lunch.

I tried my skills with some bacon wrapped Antelopes back straps and tenderloins. I need a better marinade and I over cooked it a little.

I let the internal temp get to 155, should’ve stopped maybe 135-140. Either way it was darn good.

I think if bacon was wrapped around a turd, it would be fit to eat!!

Gotta have fried taters done in bacon grease to go with that liver and onions.
Love that dish.

I have 2 pans of them in the oven. This batch is season with just a little salt but I am wondering about other seasoning. Old Bay, Cheddar & Bacon popcorn seasoning, etc.

EDIT: The recipe I tried called for 2 hours at 225, WRONG! They came out Cajun style, blackened!

Pulled a cowboy cut chop out of the freezer and set it up for smoking.
Hit it with a little Elk Creek Black Label AP then worked it up with some Butcher BBQ Wild Cherry.

Smoked it with some cherry wood until the internal temp was 120F.
