1) After cooking, why does the meat need to rest? Did it do sit ups in the smoker?

2) If you buy a char broiled or flame grilled burger, why do they drown the taste with way to much ketchup and mayo?

It allows the meat to stop cooking and getting burnt from my understanding.

...just grab it and eat it. Taking the time to let it rest or put stuff on it just helps kill the enjoyment.
