You do not need to mask the flavor of this animal it is like wild turkey.
At least the wife seemed to think so. One of her co workers seen her eating fried chicken at work during lunch and said you eating chicken today?
She went on and explained and they all wanted to try it.. She took some the next day and they all loved it.
The meat color was very light like a skinned chicken.
I could not help myself I had to fry a chunk up after skinning one.
After I fried it I was no longer worried about the skin as I wanted the meat under it.

You guys are missing out if you do not try it.
Freezing it with guts in is fine.. bacteria does not get into the meat until oxygen is present.
I would not eat the tenderloins or innards though as they could absorb some off flavor.

But the backstraps and "hams" should be just fine.
Better than Paddlefish and better than big old tough flat head.
Yea I just said that.

Kenneth is out of your area but may be able to suggest a taxidermist in your area. Look at a taxidermists cat mounts before handing your cat over. Cats take a little extra touch that not all taxidermists have.

Expect to pay $800 or more if you want it on some kind of landscape, or want it swatting at a quail or something.
The disappointment of a poor mount will last a lot longer than the poor caused by a quality mount.

They are such cool looking critters, but i dont think i have EVER seen a good mount. the face always looks distorted. but i looked at the link bassin posted and the pictures do look good.

Make sure the taxidermist you choose knows that a bobcat does NOT have a black nose.

I have both bobcat and mountain lion. I just eat the back straps but it’s good. Mountain lion is damn good. Wish I had some in the freezer now. But I have other trips on the calendar for 2019....

I have caught many decent fish from the Arkansas river and last flat head was 36" that the wife caught and it was tough and chewy.
Same goes for the last Blue she got at 30" long it was tough also.
The smaller ones are fine and flaky like eating crappie.
7stw I am glad you have eaten some off the wall critters.
