I prefer steaks cooked over charcoal but not against cooking in cast iron indoors.
Morning breakfast cooked with Jimmy Dean Sausage and bacon. Add some real butter, giving the steak about a minute and a half on medium heat each side. The sausage and bacon seasonings really contribute to the overall flavors of the ribeye.
USDA Prime Ribeye from Costco is the steak of choice.

ya I keep threatening to replace okeefe and merritt with a modern commercial stove. but that old stove keeps on kicking ... one has to be creative to keep one of those running. you just can't purchase parts off the shelve. you need to dig up people that reman your old parts .. like say gas safety shutoff valves. I was really fortunate to find new old stock for oven thermostat.

that stove weights a ton .. a major pita to move.

thanks .. will be giving them a call

edit: called and found out they want $225 each for a reman part.
I need two valves so $450 or not worth it. when you can use modern safety valves with a bit of rerouting.

seeing $2,500 to $4500 on ebay jacking up parts prices .. to me it's just an old stove that I want to keep going.

which reminds of Eddie's steakhouse in Tulsa near 31st Harvard. just before they sold the property and closed. I asked retiring owners would they be willing to give their secret of how they cooked their steaks.

they replied no secrets .. would you like to come back to kitchen and watch how it's done? well no duh .. I said ya and followed one of the brothers back to kitchen. they used an old commercial oven that heated from above. I soaked in much as I could.

which leads back to my grillevator .. which also heats/cooks steak from above.

prime ribeye was priced at $9.99 vs choice ribeye at $9.49
usually Tulsa costco prime ribeye at $13-$15 lb

a little over 15lbs

prime ribeye was priced at $9.99 vs choice ribeye at $9.49
usually Tulsa costco prime ribeye at $13-$15 lb

Nice score! We usually get them cut. They are 19.99 a pound at about 18 oz per steak.
Back in the day I could devour an 18 oz and have room for a giant baked tater and veggi, but I don't work for a living anymore.
12 Oz is enough for me now. Nice and thick to get a good sear and an almost rare center.

tonight's ribeye .. changed temps/times slightly to achieve closer to med rare
oven to 110f .. seared on high for two minutes first side, one min second side
