Basic yellow cake from scratch
Then if I remember right I used the recipe in the lodge "Field Guide to Dutch Oven Cooking"!
Pretty sure I omited the water and used the pineapple juice with milk to make the 1-1/4 cups.
It was my first and only time making it.
Looks like I will have to do it again soon!

I remembered after seeing the recipe, old Justin (may he R.I.P.) used pecans in his version.
Justin Wilson's Pineapple Downside Up Cake
1/4 lb. (1 stick) butter or margarine
1/2 cup firmly packed brown sugar
6-9 pineapple rings (reserve 1/2 cup juice)
1/2 cup chopped pecans
2 large eggs, beaten
1/2 cup sugar
1 tsp. vanilla
1 cup flour
1/2 tsp. baking powder
Dash of salt
Preheat oven to 350 degrees. Melt butter in 9 or 10 inch deep skillet or baking dish. Stir in brown sugar. Arrange pineapple slices and sprinkle on pecans.
Mix eggs, sugar, juice and vanilla in large bowl.
Sift flour, baking powder, and salt. Mix with egg mixture.
Pour batter over arranged pineapple. Bake 45-50 minutes. Cool thoroughly and invert onto platter.
