Is anyone interested in keeping quail?

I have always thought of getting into raising some to turn loose at the farm to see if they would reproduce in the wild so we could have quail on the place again since they have all but disappeared now. But i dont really have room where i live to hatch and raise to the point of releasing them.
Hawks are hell on them

I guess I have just stuck with my scissors method because it’s what I learned, and it’s super easy. If I’m in a hurry, I can do them like 1 minute per bird lol. It goes:

Grab quail, cut off head with scissors
Cut off wings/feet
Peel skin off, start in breast area, it will slide right off because you cut the feet/wings
Then cut off the butt/vent.
Then run the scissors down both sides of the spine
Then the spine and all of the innards come out together
It literally goes so fast!

It leaves you with a skinless spatchcocked carcass

I like to wrap them in bacon and grill or smoke ‘em.
Also like putting them in a baking pan, dump some cream mushroom soup over them, bake then serve over rice.

My kids love eating quail! They enjoy nibbling those tiny little bones lol
