There's enough squirrels in my front yard to get by for a while, and if someone has a recipe and can tell me how to clean an armadillo, I'm in fat city.

Here I come to save the day!!!

I have eaten many armadillos from Oklahoma. First one about 20 years ago.
Last one about 4 years ago.
Just skin to remove the meat inside and rinse and slice into small pieces and pan fry.. Season it like a chicken strip.
Or grind it and make pork sausage or slow cook it or pressure cook it and make something like BBQ pulled pork.

I have Bobcat and Coyote info also.
OH MAN the Bob Cat is delicious pan fry like chicken strips.
Coyote needs soaked the others do not.
Use the lemon juice vinegar mix some here use on hogs.

Wear gloves when cleaning dillo, they sometimes carry leprosy. About a dozen cases a year in the US caused by them. Supposed to be safe once cooked I believe.

Probably your best decision.
City guts can't digest what my guts can.

I would say the thing I made that tasted the worst is banana peppers stuffed with catfish eggs cooked over some wood that floated down the river and got trapped on the rip rap below lock 16.
I cooked it right there.. was a buddies idea..I had ketchup packets in the glove box.
I ate all of them but 1 as my buddy said he was full and had that 1.
Later he told me it was awful!

Yea well it must be good for ya though so eat it. I have not made any since and no plans to do so.
