There's enough squirrels in my front yard to get by for a while, and if someone has a recipe and can tell me how to clean an armadillo, I'm in fat city.

I have eaten many armadillos from Oklahoma. First one about 20 years ago.
Last one about 4 years ago.
Just skin to remove the meat inside and rinse and slice into small pieces and pan fry.. Season it like a chicken strip.
Or grind it and make pork sausage or slow cook it or pressure cook it and make something like BBQ pulled pork.

I have Bobcat and Coyote info also.
OH MAN the Bob Cat is delicious pan fry like chicken strips.
Coyote needs soaked the others do not.
Use the lemon juice vinegar mix some here use on hogs.
