Dairy sheep ? Never heard of. Sheep and horses graze very close. Sheep / lamb and pigs are a white meat. Goats and cattle red meat, horse too but we don't eat ponies in the U.S. Pigs done right are prolific lb gainers thus being profitable so to speak.

There are a few, breeds like polypays are good for meat, wool, and dairy though for now we’re only sticking to hair sheep

I did yes, I bought my sires from 6M Galaxy in California and most of my does from OK Corral in TX. It was not uncommon to milk 16 to 20lbs a day from each doe.
