Dairy sheep ? Never heard of. Sheep and horses graze very close. Sheep / lamb and pigs are a white meat. Goats and cattle red meat, horse too but we don't eat ponies in the U.S. Pigs done right are prolific lb gainers thus being profitable so to speak.

There are a few, breeds like polypays are good for meat, wool, and dairy though for now we’re only sticking to hair sheep
