Mix 3 TBS brown sugar, 3 TBS salt, in 1 cup hot water, add 2 cups cold water.
Add 3 TBS burbon, 2 TBS olive oil, two bay leaves, and one small onion coarse chopped. Garlic if you want.
Let it sit in a zip lock bag in the fridge for about 4-6 hours. No more.
Rinse the roast and cook on the smoker or in the oven. A coating of bacon will keep the outer meat moist.
The onions are not only used to add flavor, but keep the meat suspended in the brine.
Try this, and you won't make one anyway else.
