Well, the italian sausage is certainly italian sausage.
The jalapeno cheddar, following the recipe, has too much vinegar to me. Its good, but too strong on vinegar.

They have a walk-in store in Wichita Kansas. They have EVERYTHING to make great sausages.
Use the high temp cheese the next time. It won't melt until it reaches 400 degrees, they have that in stock.
They have an online forum where they answer questions, and have great video's of the sausage process, and things to avoid.

Here is some polish sausage with high temp pepper jack cheese I made a few months back. I made it from a recipe in a Sausage Making book that I have. It uses Instacure #1 to insure safe keeping and I slow smoked to 150 degrees before vacuum sealing and freezing. It turned out great.
