Dole Plantation is a big nothing but a potty stop and a bunch of junk to sell you. Skip it really. Diamond Head now requires reservations to go there and it's OK with a decent view at the top but not one of my favorite things although have done it several times. There is no volcano currently erupting so I'd forget that since you have to spend a lot of time and money to go there from Oahu and really not much to see. Actually there is as much beauty on Oahu as there is on Maui but you should rent a car for a day or two and get out of Honolulu and drive to other scenic parts of the island. There are some beautiful beaches, water and green areas away from Waikiki. Lots to do in Waikiki area. Great beach, catamaran cruises, outrigger canoe rides, major surfing, stand up paddle boarding, parasailing, mai-tai drinking, lots of live entertainment, great restaurants and lots of shopping of all kinds. Maybe helicopter tour if you like but I've never done it and I've never been fishing but worth looking into both if you are interested. If you are staying in the Waikiki/Honolulu area I suggest walking or riding the bus if too far to walk. You do not need or want a car (or a jeep) to just look around the city. Catch the bus to Pearl Harbor but you also must make reservations to take the USN launch out to the USS Arizona Memorial. Make them on line for a buck or something each. No entry fees into Pearl Harbor itself but also the USS Bowfin and USS Missouri offer tours but there is a fee for those. We spent two weeks each year and mostly on Oahu for many years and never got tired of it.
