Anyone else staying up late to start their Turkey on the smoker so it’s ready by lunch time?

Just got mine prepped and now waiting on my Traeger to warm up. Hopefully I will have some good pictures of it tomorrow… gotta wake up every hour to baste it with butter. Sleepless night for me, hope my family enjoys it.

Nope.

I did the preliminary prep yesterday evening, dismantled the bird, placed in the fridge un covered to dry.
Will be cooking the bone in breast on top of the pan of dressing in the oven, will save the leg quarters for smoking another day.

With mama being Asian we swap off every other year between a big turkey dinner and Asian food and this is the year for homemade Vietnamese cha gio (spring rolls)........I'm really looking forward to lunch.
