What's the best platform to start with if I want to built an AR10 or something that shoots 308?

DPMS, CMMG, Fulton Armory, Rainier Arms, Larue Tactical all make .308 Lower Recievers at least. I think they all make everything you'd need to build a complete rifle if you wanted. As far as the best, I've never heard of anyone say anything bad about Larue, but they are $$$.

Keep in mind magazine compatibility and availability when you choose whatever it is you choose.

This is a picture of my AR project. So far it has a Timney competition trigger housed in a Ranier Arms lower made by Mega, a Daniel Defense QD sling mount, Magpul MOE hand guards with Magpul rail sections, a Vickers blue force sling, a surefire flashlight, a BCM upper, a BCM bolt carrier group, a BCM charging handle, an Aimpoimt H-1 RD optic, a Larue Tactical high QD mount to allow for a lower 1/3rd cowitness, a Troy Industries rear BUIS, and Magpul magazines. It really does shoot like a champ!!

Here's my AR's...they are sharing the same lower until I can find some dedicated lowers for them.

First my Colt LE6920 w/ Troy free float battle rail, Troy rear folding buis, Trijicon ACOG w/RMR, Crimson Trace MVF-515 Light/Laser Vertical Foregrip

Second is my 50 Beowulf which is new (haven't had a chance to shoot it yet)

Third is my Loki Weapons System 6.5 Grendel/264LBC with Fail Zero BCG and pink Hogue free float forend. (also brand new and un-shot so far)

Fourth may not qualify as an AR here but it's an awesome gun. S&W M&P 15-22 Talo Limited Edition Pink Camo with match barrel and Nikon Prostaff Rimfire 3x9x40 w/150 BDC.

And, yes, I like pink.

Cool pink, especially that camo! Maybe I need orange camo on one of mine. I like orange.
