If you don't mind the "coyotte" color in the snow camo, I would just put a coyotte colored handguard (13-15 inch) on it. Otherwise, there are some nice dips for around $40-50 that could give you just about any pattern you could ever want. Dips are generally more durable than spray paint and give a very professional look to a $1400 AR.And if so, what would you do to change it?
I just bought this off of a coworker. It's a Saint that he had cerakoted and then changed it to a free float handguard later. It just doesn't look right to me but I kind of hate to rattle can over it because it appears to be done well.
I guess I'm just not into camo guns.

Not much. I'd still dismantle it and either try and remove it myself, or have someone remove it and respray in FDE, black, or old school gray. Or have it re-anodized.
