Did that title peak your curiosity ?

Well I went to Eufaula for a few days and only heat was the wood stove. did not matter as I was out hunting for deer.
I seen a bunch and no antlers and a lot of bucks. and they were all skittish.

Probably from local hounds chasing them. I hunted the thick briars and my face pair for it..after all that is where the deer were.
Anyway I did not get one but I did find some Oyster Mushrooms.

At least what I thought were Oyster mushrooms,, my buddy had me second guessing and I took them home and I positively identified them..
Oyster mushrooms and one huge one over 11" wide.

Cooked them up last night ..most recipes I seen were for soup or something.
I wanted fried ones so I cut them small enough to fry and MAN OH MAN those are tasty.

I used my rabbit fry recipe.
Small "t" is teaspoon

1Cup Flour
2 t paprika
2 t Cajun seasoning
1 t creole seasoning I use Tony Chachers
1 t ground sage
1/2 t salt or none if you are watching the salt intake as the creole is salty.
1/2 t black pepper
1/2 teaspoon onion powder
1/4 t garlic powder

Mix those dry ingredients together.

Remove 1/4 cup of the dry and mix in 1 egg to that 1/4 cup of dry.
Add milk and or water until it is pancake batter consistency.

Take the washed and shook mostly dry Mushroom or other meat and coat it in the dry. You should have 3/4 cup of that dry mix.
Then into the wet and then back into the dry.

So dry- wet-dry. Then fry.. I deep fried my stuff.

I even ate some of the mushrooms raw.. very good stuff.

Some reading to identify this tasty Mushroom.

So deer are in the thick part of the woods and the mushrooms are growing in/on the wood :)
