Okay. Stainless is much easier to work with, but, in either case:
Most engraving can be ground off with a 600-800 belt and a bit of care. Depending on the type and style of engraving (and your initials compared to the previous owner's) it could be altered/filligreed. I'm not an engraver, and haven't worked with anyone in OK, but what you want is certainly possible.
I know MagnaPort has done some interesting stuff, it might be worth calling them.
