I have a Remington 700 .308 varmint BDL. It came with the cheap factory stock. I know where I can get an HS Precision stock that was removed from a new Remington 700P. Since it already had an action in it, should my action drop right in, or will I have to re-bed the stock for my action?

HS stocks come with an aluminum bedding block, so you can install it as a drop-in (ensuring that the action and recoil lug are seated as far back as they can go in the recoil-lug slot in the bedding block). Make sure you torque the action bolts properly, and you should be good enough to shoot it at far more accuracy than you had with the factory stock.

Like Nikat said, bedding the stock to the action with something like Marine-Tex will result in a better fit (which usually means better accuracy) but at that point, the stock/action fit is probably not the weakest link in accuracy.
