Star Trek.... Capt. James T. Kirk???
Star Trek Next Gen.. Capt. Jean-Luc Picard???
Star Trek Enterprise... Capt Jonathan Archer??? Pre-Star fleet but still worth consideration.
Star Trek Voyager... Capt. Kathryn Janeway???

Im going with Kirk, just because I like his total and complete "ass-kickery". Even though I like the Enterprise better and 7 is well... Its 7, should I say more?

I think Kirk had more style and devil may care attitude, but Picard was the better captain. JMO

Next Generation > Deep Space Nine (where's the Captain Sisko love, you racist?) > Voyager > Enterprise > Original Series.

I was too young to enjoy the Original. My dad was and still is the biggest Trek fan that I know (though he never did cosplay at conventions). I hated it at first and really got into it during DS9, then I realized that I've liked it the entire time.
