You got to toss the fat in it ..if it is lean then cook in a table spoon of butter and spoon butter over it.</p><p>That is what i do with deer meat breakfast sausage, same recipe.</p><p></p><p>Ok 4 cups ground meat. or 2 lbs if you weigh it.</p><p>2 teaspoons ground sage.</p><p>1 1/2 teaspoons black pepper.</p><p>1 teaspoon salt.</p><p>1 teaspoon tender quick.</p><p>1/2 teaspoon ground cayenne pepper.</p><p>1/2 teaspoon brown sugar.</p><p>All measurements are heaping.</p><p>Mix all the spices in a small bowl spread out the ground meat and sprinkle spices evenly over the ground meat.</p><p></p><p>Now mix the meat and spices together.</p><p>If you over mix it the sausage will be tougher. That is why I spread out the meat to get more even coat of the spices and less mixing.</p><p>Cook it and enjoy.</p><p></p><p>For Italian sausage you add 1 more ingredient to the above spices.</p><p>2 teaspoons ground Fennel.</p><p>That is for your spaghetti etc.</p><p></p><p>Again awesome shot on the Piggie Love it!!</p></blockquote><p></p>
