Wow... I'm gonna have to do that! Haven't made me no etoufee in years. I make jambalaya once in a while, but I seriously miss me some etoufee.
Looks like a pretty similar recipe to what I used to do, too.
And I agree, Tony's and Old Bay is about 90% of my seasoning these days! Unless I'm making Italian...

to tell the truth i dont remember, but seems like it. i do know that Mom only cooked the tails not the whole critter.
It's pretty close, yes.
You can easily use shrimp instead crawfish. I would use the smaller and cheaper popcorn or salad shrimp. But since crawfish and shrimp taste different, the dish will taste slightly different.

I just picked up 4 packages at $6 and change for 12 oz. So that means I've got... 3 lbs? Sweet.... gonna make up a BIG batch of etouffee for the folks at work tomorrow.
