We are doing some more cabbage preservation in the form of fermentation. Weigh shredded cabbage and add 2% salt by weight. Will can when done fermenting. Yeah I know we'll lose the probiotics. But it'll last for years. Goes good with homemade polish sausage.

I remember my stepdad made a 5 gal crock of it in Arkansas. Don't know how it ever turned out. i wouldn't have ate it....lol

Never cared for it.

Granted it wasn't homemade and more than likely came out of a can but growing up my mom would make sauerkraut and weiners for supper now and then and those were the nights that I'd elect to eat a bowl of corn flakes for supper.
