I went there a few years ago for work and ended up going to 3 different BBQ places while I was there. Oklahoma Joe's was pretty good and another one that I can't remember (wasn't that great obviously) and then Rosco's BBQ ( 9711 Kaw Dr, Edwardsville, KS 66111).
Roscos is a little hole in the wall place next to a gas station not far from the Interstate. When I pulled up to it I had my doubts about it. Turns out that it was the best BBQ I had on the whole trip (and honestly, some of the best I've ever had). Of course, I kept my choices to pulled pork sandwiches at all of the places so I could compare apples to apples, so I can't speak to their other offerings. I do know that I have woke up from dreaming of them a few times since that trip.

The Hereford House at Union Station is a must go if it’s still there.
They were chosen to be the steak house to serve at the 200 year dedication of the Statue of Liberty.
When going in the door there are piles of charcoal burning, then transported to the cooking grills with shovels by staff.

Oklahoma Joe's became Joe's Kansas City BBQ - the only time I went there I was not impressed.
I have to give my two cents..
I've never been to KC, but I absolutely love Famous Dave's sauces and pickles. It's exclusively what we use here at home. As soon as I saw they had a restaurant (I had no idea) I sent this thread to my wife, and kept reading. It didn't take her too long to pause and ask me when we were going to KC to eat Famous Dave's.
I told her that according to the rest of the thread, there are many better places to eat, so we'd need to be there more than just two days.

We liked Joe's. Q39 was alright but seemed overpriced. Liked Jack Stack.
There is a great Italian place across the tracks from Union Station call Lidia's. We love it but it is a little spendy.
We've not toured the WWI museum yet but it's on the list and comes highly recommended.
There is also a Holocaust exhibit at Union Stations till January. Hoping we can get there for that.
