Blackened Fish (I like catfish, but this works on everything)

Tbls garlic powder
Tbls onion powder
Tbls black pepper
Tbls chili powder
Tbls ground thyme
2 teasp ground oregano
1 teasp salt
2 tbls all-purpose flour

Mix all these dry ingredients well.
Pat filets dry. Coat with mixture.

Heat skillet med high- high. Add just a little olive oil.
Cook filets until dark brown/black. Serve with rice.

We love to take a fresh side of Salmon and spray it with a light coat of cooking spray then add a little salt, fresh cracked pepper, Herb de Provence and a good coat of lemon pepper. Then I use my charcoal baskets with a little piece of hickory along with the charcoal and light one on each side of the Weber Kettle leaving the middle with no direct heat. Place the salmon on the middle of the grill skin side down and cook until the insides are no longer translucent, then drizzle with some fresh squeezed lemon. I usually throw some seasoned asparagus, zucchini, or fresh mixed veggies on the grill while the salmon is cooking. That and some Jasmine Rice or Risotto makes a great meal.

Italian dressing and onions in the broiler.

Smoke them over hickory, cover with Paprika.

Lemon pepper and a little butter in a skillet.

Wait, you said crappie? Then half corn meal half flour, salt & pepper and fry them puppies up! There is no other way to eat crappie.
