Not in law enforcement but there are a lot of robberies in my profession. Thankfully no one has been shot but to ease my wifes mind I told her I would look into getting something. Yes I know there is no such thing as "bullet proof" and I am not looking for any type that has plates. I would have to wear it for 10 hours at a time so the best protection I can get and still be able to move. Even the thinnest protection has to be better than wearing nothing right?

Ok, I would get fitted for a vest by someone who knows what they are doing. That will help some. I would take a look at safariland and second chance vests, particularly in level II. Body armor is not comfortable, and will always restrict your movement to a degree. If you do start wearing one, I would wear a sweat wicking shirt, then the vest, then a white T-shirt, then whatever else you wear. That should help conceal it a little bit

As far as protection level, the minimum would be the level that's required to stop what you carry.
Get fitted by a professional. Otherwise you'll have wasted money on something that you will not wear. They are bad enough even when fitted correctly.
And make sure you get a spare carrier. They get pretty rank really quick.

i have some armor plate from my old job that would stop A LOT more than body armor would. the only downside is that it is very heavy. i plan on using it in a couple of vests

Be careful doing if you don't make body armor for a living.

Some welders did this a few years back and one was killed by ricochet.

+1, not to mention the very real threat of physical harm from spalling.

I'd never use metal or ceramic plates without a spall guard/liner.
