Go over to the CMP forum for tons of info, grease just being one of them.
Any grade 2 grease is good, IMHO, I use the Shell red grease because I can see where it is too thick.

Over on the CMP forum, there is a sayin'; "if it slides, grease it. if it rotates, oil it."
I have applied this idea to other firearms and surprise it works.

Once you start with the Garands, you will be cured from the "Black Rifle Disease". you'll become a full fledged "Grandaholic"

Oh, I forgot - when you take the bolt out of the rifle, hold it up to your ear and make sure it rattles. The firing pin needs to move freely inside of it, or you can get slamfires. If it doesn't rattle, you'll need to take the bolt apart and clean out the firing pin channel.

I usually wipe everything down with CLP for rust prevention, then use the original M1 grease in the little bitty pots. But any halfway decent gun grease will work.
