One trick if you don't have a vacuum sealer is to first wrap your meat in Saran Wrap. Wrap it several times and make sure you get out all the air. Then wrap in butcher paper. If you get the air out should last at least a year. Works good but the vacuum sealer is more consistent and faster.

As long as it's vacuum packed it's good for 2 years or untill you break the sill on the bag.
