Caught a Whopper

What kind of oil do y'all use? Also, how do you judge the temp of the oil? I've always done the old, water drop sizzle test.......

I use corn oil, or vegetable oil.
An old redneck way to judge the temp of the oil is to drop a "strike anywhere" wooden match into the oil. (the one with the white tip)
When the oil gets to 350, the match will ignite, and instantly go out. Pretty cool way to judge the temp of the oil, and its darned accurate.
