So I looked at my cable bill and it jumped $80 out of the blue on me this month so I am looking at possibly dropping and just keeping Internet. My question is on theses devices can I just sit and watch tv (discovery, history, ect..) or do I search like I do on Netflix?

If you get a Fire TV Stick, side load Kodi, and then load Genesis, you can watch anything. And I mean ANYTHING! Spectre is already on there. Sports, anything you want to watch. All NFL games. Every movie ever made. Adult movies, all you want. It's amazing. It does take a little technical ability or you can buy them already hacked (it's not really hacked, but that's another story). Took me about an hour.

Call them, tell them you are going to drop the TV service and start streaming. They will give you a better deal, lock it in for a year, then make sure you call before they do it again. Otherwise go the streaming route, but it wont be the same as cable.

This past summer after we moved, we cut the cable entirely. We actually went 3 weeks before we even turned the tv on. However, college football season came upon us and my wife really wanted to watch football. We installed an antennae and can pick up fox so she can watch some games. Other than that, we use Netflix and Amazon prime on the roku. We also have some abc app that we can use from an iPad too. I honestly don't miss cable. Now, that being said, we usually only watch about 4-5 hours of tv per week. That is mostly on Friday evening and the weekends.

I have the Roku streaming stick, its basicly just a way to get internet to your tv so you can watch Netflix and/or amazon and other like apps. Been almost a year with no cable, just Netflix and an antenna.

Off the air TV ain't too bad, all the local channels plus a couple movie channels and PBS. 11 years ago we bought this property and moved. I decided to stick up an antenna and decide on cable or satellite later, it's still later, we haven't missed much and saved at least 60 bucks a month over the last 11 years. Only down side is putting up with the commercials, PBS isn't too bad but the rest are just as bad as the network channels.

I pay 35.00 a month for internet through a wireless carrier, cheap but not really fast enough to stream. We satisfy our movie desires with Red Box rentals and get along just fine.

What's the data consumption like when you go 100% streaming like that?

this isn't meant to sound flippant, but that likely depends heavily on how often you use the services. If you're a heavy user then it might be pretty high, but if you're one movie a night then likely not much more than your current usage.
