Pickled three quarts of asperagus today.
Getting so much we can't eat it all.
Tried freezing and vacuum packing it in the past.
It gets soggy and limp. Still edible, but not what I'm looking for.
Any body canned/pickled this before?

I have not and never could make a crunchy pickle either.. wife made crunchy ones though.
I do not feel sorry for you having too much asparagus.. I planted over 50 a few years ago and only get 4-6 that come up.
I have resorted to letting them get taller than me then cut the ends off the branches.. those are tender and I get more that way.

yea that would trump my 3 year old stuff.
Grandma said it grew wild in the ditch by her house in Cushing and no one around there would plant it as there was more than enough to go around that grew wild.

The canning mix I used is a quick process.
Says it can be consumed in 24 hrs. Gave it a couple of days.
This stuff Is really good!
Ate most of a quart of it today. Wife liked it too.
The stems that are cut off so the tops can fit in the jar are the best.
The tops got a little limp and soft. The ends were crisp. In the future we will cook the tops the normal way and pickle the stems.
Used the dill pickling mix.
Just about have enough for another batch. Going to try the bread and butter this time.

We were gone all of last summer and lost our bed to heat and weeds. Guess we will be building a new bed and starting over. It is always worth the effort.

I had a gopher get into ours, killing several crowns before it got trapped.
We still grow 3X more than we can eat.
Tried freezing and vacuum sealing, but they come out like a limp rag.
Pickling seems to be the ticket.
