I have a Gerber with the guthook, and it has always worked like a champ!! With the hair, or against no problems.... Dont forget the butt-out tool, tried one of those for the 1st time and it works pretty good..

try a carpet hook blade in a sheet rock knife they work pretty good also work good for skinning just remember to go the same way the hair lays plus they are cheaper then regular knives and the sheet rock knife will retract to protect the blade

+1 on the sheet rock knife! Makes a very quick and clean cut, then you can simply throw the blade away. But my deer field dressings almost look like a sacrifice of some kind. If there are trees nearby, I use a couple of bungee cords to lift the deer up slightly and tie the front legs out of the way. Helps with blood and entrails drainage.
