Marinara Sauce:

1 Tbs olive oil
4 cloves garlic minced
1 yellow onion diced
28 oz can crushed tomatoes
2 Tbs fresh chopped basil

In a sauce pan, saute garlic and onions in olive oil. Add tomatoes and simmer for 30 min. Add basil and simmer another 15 min

Manicotti:

1 lb sweet Italian sausage, browned
16 oz ricotta cheese
2 cups finely shredded mozzarella cheese
2 Tbs fresh chopped basil
1 tsp fennel seeds
1 pkg manicotti shells, cooked for 7min, rinsed and cooled - 14
1 cup parmesan cheese

Mix all ingredients except parmesan cheese. Ladle just enough sauce onto bottom of pan. Place mixture in plastic bag, cut off corner and squeeze into each shell and place into pan. Ladle remaining sauce onto manicotti, then sprinkle parmesan cheese on top. Cover with foil and bake for 30 min at 350. Uncover and bake another 10min. Let cool a few minutes then serve.

That sounds yummy. My lazy bachelor version is the following: (1) boil manicotti (2) add pasta sauce from a can (3) eat :P
