I use Shawnees best corn meal mix, add cheese, a can of corn and some diced jalapenos, oh, also finely dices onion. No sugar, sugar doesnt belong in my mexican cornbread.Use creamed corn in your Jiffy mix and two eggs for a binder and 1/2 stick butter. Sweeten with 1 TBSP sugar.

Cook in a cast iron skillet. Its moist and thick every time.

I usually season with Avocado oil. This makes me feel better.
