OKC's Food Truck Scene: Legit or Lame?

I'd like to start a food truck. I even have a cool name and logo picked out.

I've tried about 10 or so.....and nothing has been amazing. There have been some tasty samples. However, for the price compared to what you get.....its just not there. Recently I paid $8 for a 4in sandwich, plus tip of course.
